I love eggs benedict of all varieties. But the most frustrating part of ordering eggs benedict is the fact that you can't just get all of the choices together--I mean, I love canadian bacon, but I also love spinach, as well as avocado. The problem is, of course, making decisions. Which is the best part of my new ability to make hollandaise sauce. Now I can (and do) make eggs benedict with pesto, cheese, avocado, turkey, spinach and tomatoes.
